I teach using a mixture of theoretical knowledge, anecdotes from my experiences, and hands on activities that can be done outside of class as well as in class.
In terms of homework, I ask students to apply their knowledge to everyday situations, as well as extra reading if they wish to. There is some required reading, such as the DSM-V, but not much.
If students have anecdotal or professional anecdotes of their own, I encourage them to share this with the class if they feel comfortable doing so.
